What to Make With Leftover Rib Eye Steak: 21 Fantastic Recipes

Do you have the bad habit of overestimating your guests’ appetites?

Most home cooks are guilty of this, but it’s not something to feel bad about, as you can still make some delicious meals from leftover foods.

In this post, I’ll show you what to do with leftover rib eye steak.

The following leftover rib eye steak ideas will make you feel that your steak was just cooked a few minutes ago!

1. Leftover Steak Tacos

It’s hard not to enjoy a taco regardless of what’s stuffed inside.

The iconic Mexican dish is simply too good to pass by.

Cutting your tasty leftover steak into small pieces to fit into tacos won’t only make for a delicious meal.

The sauces you choose to add will soften the steak as well.

This will solve the (hardness) issue of leftover steak.

There are quite a few ingredients in this one, but you can make the whole thing in only 30 minutes.

2. Leftover Steak Stroganov

Strognaov is such a versatile dish.

Fresh chicken, pork, or beef? No problem.

Leftovers? Bring it on!

All you’d need is some mushrooms, chopped onions, olive oil, butter, and your leftover steak.

As the mixture is sizzling on the pan, add some pepper, greek yogurt (or sour cream), and cornstarch.

Once again, the entire cooking process takes less than 30 minutes.

Trust me, the steak will feel as fresh as ever!

3. Spicy Steak Ramen Noodles

Tasty? Check, easy? Check, less than 15 minutes? Check.

Only 7 ingredients? Yes, please!

If your leftover steak is just sitting there, then why not go the Japanese way and make ramen out of it?

Noodles are a good fit with anything, but a juicy steak will elevate the taste to new levels.

Just simmer your leftover steak in hot sauce, and add some chopped onions, garlic, Worcestershire sauce, and some brown sugar. Voila!

4. Beef and Rice with Broccoli

If you want the carbohydrate content of rice, the healthy benefits of broccoli, and the protein of your leftover steak, then look no further than this recipe.

There are 10 ingredients in total, but don’t worry.

You’ll still prepare the meal in less than 30 minutes (25 to be exact).

If your leftover steak is a bit harder than usual, then you might add a little extra vegetable oil to soften things up.

You’ll have to compensate with a bit of brown sugar to keep the taste as good as it can be.

5. Steak and Potatoes Skillet

The original recipe requires you to cut a flank steak into small pieces and add them to crispy, golden fries on a skillet.

I don’t see why we can’t replace that flank steak with our leftover ribeye steak!

This recipe is a bit demanding on the ingredients.

You’ll need 10 ingredients for the steak and potatoes and 4 ingredients for the marinade.

Still, you can do it within less than half an hour.

Once you try this recipe once, you’ll be making it with your fresh rib-eye steak too!

6. Leftover Steak Fajitas

Fajitas are known for their flexibility, but they’re also known for requiring a fair amount of ingredients.

While this dish isn’t an exception, you’ll be happy to know that tortillas are the only thing you might have to buy.

That’s because most ingredients are already present in most households.

What was that? Do you want more good news?

Once again, 30 minutes is all you’ll need, and this recipe will provide you with 3 tasty servings.

7. Steak and Beef Enchiladas

Enchiladas is one of the tastiest Mexican recipes that will give your taste buds a unique treat.

So far, we’ve kept every recipe under 30 minutes.

This time, we’ll double the cooking duration.

However, you’ll get to feed 8 people with this recipe.

Additionally, if you didn’t have any of the ingredients?

You’ll spend $10 to get all of them!

This will hardly be the case as well since you’d mostly have chili peppers, corn, cilantro, cheese, and black beans lying around.

So, go ahead and try this one, you’ll love it!

8. Leftover Steak Soup

Sometimes it’s about having an easy-to-eat meal after a heavy dinner the day before.

You can use that leftover steak to make a hearty steak soup.

The best thing about this meal is that the ingredients are highly experimental.

Do you have a few leftover potato bits, or perhaps a few chicken pieces?

You add both of them to the soup for an even wider diversity of tastes.

This dish is also low in carbs and can be made in less than half an hour.

9. Alfredo Pasta

Pasta is known for being highly accepting of any additions you like to experiment with.

If you can easily make pasta with fresh meat, then what’s to stop you from using leftover meat?

If that ribeye is just sitting there, and you’re craving some cheesy pasta, then hit two birds with one stone!

With some flour, parmesan cheese, milk, and some fresh toppings, you’ll get yourself a delicious, highly nutritious meal.

Yes. It takes less than 30 minutes.

10. Steak Bites

Why bite into the leftover steak when you can cut it down into small bites?

This won’t only make the steak easier to eat, but it will drastically increase its tenderness while recooking it.

This might be the easiest and quickest recipe on our list.

All you have to do is re-season the steak with salt, pepper, and butter

Add some olive oil to soften your hard steak and a pinch of parsley for the presentation.

Here’s when you can get creative.

Would you like to add some mashed potatoes?

Tomatoes? Perhaps some bell pepper?

Just keep mixing and matching until you get your personalized recipe.

11. Leftover Steak Wrap

One of the simplest ideas to eat leftover steak is by reheating it, cutting it, and making sandwiches from it.

This recipe will take this basic concept and add a little twist to it to provide a brand-new flavor!

The secret is in the seasoning, you’ll use some caramelized onions, mustard, and olive oil to give a touch of sweetness to your savory steak.

Wrap the mixture in a bread type of your choice and enjoy some tasty bites.

12. Steak and Egg Scramble

Egg lovers will have a special liking for this recipe.

All of the ingredients are almost always present in any kitchen.

The cooking time is around 10 minutes, and it’s enough to feed 2 people.

All you have to do is to cut your steak into pieces and then reheat them with a touch of butter and olive oil.

Then prepare your eggs, toss the meat inside, scramble the whole thing, and you have yourself a tasty, highly nutritious meal.

13. Steak Nachos

Leftover steak nachos

The best thing about cooking nachos is that you can add what you want!

As long as you adequately cook the steak and the nachos, any additions in the middle can be of your choice.

Do you love cheese? Go ahead and use all types of cheese you like.

Would you like some vegetables?

Cut some fresh tomatoes and olives.

There are so many possibilities with this recipe, and every combination is a new adventure.

14. Steak Mac and Cheese

Mac and cheese is a recipe that simply blends well with anything.

Once you get the hang of cooking the original mac and cheese, you may add anything to it and the recipe will just work.

The smokey flavor of the ribeye steak mixed with the creamy taste of cheese will send your taste buds to heaven, at least temporarily.

All you’ll need is to sear your steak quickly in brown butter to soften it, add salt and pepper, and some paprika.

Add the mixture to your pasta with your preferred combination of cheese.

15. Mediterranean Steak Bowls

Steak bowls are a treat for those who love a blend of tastes.

Your steak will be mixed with some veggies, creamy hummus sauce, grilled tomatoes, and some feta cheese.

Sprinkle some salt and pepper for seasoning, and maybe a touch of olive oil, and you get yourself a restaurant-quality meal.

16. Steak Burger

Before you judge me over this one, you have to try it first.

It might be a little strange for some people to imagine a burger of rib-eye steak, but we’re just utilizing the leftovers.

Here’s what to do, just spread some brown butter over your pan, lightly sear your steak in it, and then chop it to pieces.

Prepare your preferred mix of burger toppings.

I personally love some fresh lettuce and tomatoes under the steak and some hot, molten cheesy sauce above.

17. Leftover Steak and Onions Naan

If you’re not in the mood for traditional bread or wrap, why not try the naan?

Now, with great taste requirements, comes great preparation.

Unlike most of our quick recipes on the list, this one might take you over an hour to make.

You’ll need to cook some onions, prepare a glaze, heat both your steak and naan and then broil the whole thing once you’re done.

You’ll love the result, I promise.

18. Steak Fried Rice

It’s only fair to put an easy recipe after the sophistication of the last one.

Here’s what you’ll need: rice, your leftover steak, some eggs, and an onion.

I’m not kidding. That’s it.

As for the cooking, just chop your onion, and toss it in the frying pan.

Break two eggs, then mix them together.

As they cook, cut your steak into small cubes and then put them in the frying pan.

Let them cook for a few minutes and add your rice, then mix everything.

The simplicity of this recipe is why you can experiment by adding anything you like in the middle.

Go wild!

19. Leftover Steak Burrito

This recipe is so fast that even reading it will take a few seconds!

Put some olive oil in your pan, then put it in your leftover steak.

Scramble some eggs in salt and pepper, mix them with your steak, and that’s it!

From here, you can wrap the mixture in a tortilla and add any toppings you feel like!

20. Mongolian Beef

This recipe will require 14 ingredients, with soy and hoisin sauces being the (I might need to buy that) items.

It’s rich in flavor and will make you feel like you just opened a restaurant at home.

Oh, and it serves 6 people.

You’ll start by whisking the sauce ingredients while your pan heats up.

Then chop your steak into pieces and lightly sear them in the pan.

Take your meat off the pan, add some olive oil, then add your red chills, garlic, and ginger.

Lastly, add your steak pieces back to the pan, then add the sauce.

Serve!

21. Garlic Butter Herb Steak Bites with Potatoes

If you love steak & easy meal combinations, this one is for you.

As usual, heat a pan with some olive oil and butter.

Then add some chopped potatoes, garlic, rosemary, and oregano.

The recipe will instruct you to set aside the results and cook the steak separately.

However, since we’re using leftover steak, then we’ll go ahead and add them to the mixture.

Cook for around three minutes and enjoy a beautiful meal.

Handling Your Leftover Steak

None of the recipes above will be doable if your steak is no longer safe to eat.

Knowing how to store your steak and for how long is important if you want to consume it later.

Keep the Steak Dry

Moisture is a much better medium for bacterial spread.

So, if you intend to refrigerate your leftover steak, then use clean tissues to wipe off any sauces that may have been added to them.

Keep It Sealed

Steak has a beautiful, smokey aroma that can easily be mixed with any other smell in your fridge.

An airtight container should preserve that smell as your steak waits in the fridge. 3–4 days is your maximum fridge-safe time.

Your steak will no longer be safe to eat after that.

Freeze Correctly

If you intend to store your leftover steak for a while, then you should freeze it appropriately.

Don’t use aluminum foil or butcher paper as they may render your steak unsafe to eat.

Instead, use a simple plastic wrap, preferably around each steak slice, then place the slices in an airtight container and freeze them.

They should be safe for up to 6 months.
