To get your rice ready for this casserole, you should cook it in broth because it gives it more flavor.

But don’t despair if you’re out of broth!

The mushrooms, garlic, butter, broccoli, and cheddar should round it all out.

We recommend using cooked chicken to shorten the prep time too, otherwise you’ll have to cook it first and then shred it.

Once you have it all together though, it will only take about 25 minutes at 350F.

Feel free to crush some gluten-free crackers on top for a crunch if you’d like and decide what side dishes to serve with this!

The trick to making this without gluten is choosing taco seasoning that doesn’t have gluten.

Tortilla chips usually don’t have it either, but always check the label before you buy it.

You’ll brown ground beef and mix it with pinto beans, tomato sauce, the seasoning, and corn. 

Then you’ll add it to your casserole dish with shredded cheddar and crushed tortilla chips on top. 

Bake for about 8 to 10 minutes at 400F and dinner is done!

We’re lucky because enchiladas are easy to make gluten free.

That’s because corn tortillas don’t have that G stuff.

The thing you want to check though is the enchilada sauce.

You can make your own too which will ensure it won’t have gluten.

But if you’re not feeling up to making sauce from scratch or simply don’t have the time, that’s ok too.

You’ll pour your enchilada sauce in, then layer with corn tortillas, add shredded chicken and top with enchilada sauce, then top with cheese.

Repeat until it’s all stacked up, then bake this beauty at 350F for 30 minutes.
