What is the purpose of a water pan that used in a smoker?
A water pan is meant to retain moisture in the food while its being cooked. It’s not a must for you to use it but most people do. It’s advisable to fill it with at least one cup of liquid before you start cooking. The liquid can be water, beer or a juice of your choice. Most water pans are coated with porcelain. Do not leave any acidic liquids in the water pan for extended periods of time to prevent corrosion.
What is the drip pan for?
The drip pan is primarily meant to hold any moisture that drips past the water pan during cooking. It’s usually located at the bottom of the smoker. To ensure that all moisture condensation is trapped, ensure that the smoker is tilted back slightly off level when in use. Lining the bottom with foil also helps to simplify cleaning.
Is it possible to use the smoker without smoke?
Yes. Just do not put any wood chips in the loader, and you will be able to use it for home brews, as a slow cooker or for proving bread.
How do I pre-season the electric smoker for the first time after assembling?
First, ensure that the water pan is in place but without water. Plug in power and set your smoker to 275F. Run it for 3 hours and put in the wood chips during the last 45 minutes.
How do I control moisture in my electric smoker?
The vent is the one that controls moisture in the smoker. Leaving it more closed allows more moisture to be retained inside and vice versa.
