Ruth's Chris Lobster Bites Recipe

Ruth's Chris lobster bites ares all about the buttery richness that makes every piece melt in your mouth.
I never over-season—lobster has a naturally sweet, delicate taste that doesn’t need much.
A simple batter keeps things crisp without overpowering the delicate seafood.
Cooking these at just the right temperature means a crisp outside and juicy center every time.
A quick toss in warm butter right before serving locks in that rich, golden finish.
The texture contrast between the crisp shell and the soft, buttery meat makes every bite addictive!

Ingredients

  • 1 lb Lobster Tail fresh
  • 1 cup Flour
  • 1/4 cup Cornstarch
  • 1 tsp Paprika
  • 1 tsp Salt
  • 1/2 tsp Black Pepper
  • 1/2 cup Mayonnaise
  • 2 tbsp Chili Sauce
  • 1 clove Garlic minced
  • 1 tbsp Lemon Juice
  • 1 tbsp Butter melted
  • Oil for frying

Instructions

  • Begin by cutting the lobster tail into bite-sized pieces and pat them dry to remove any excess moisture, which ensures a crispy coating.
  • In a bowl, mix together the flour, cornstarch, paprika, salt, and black pepper for the coating mixture.
  • Dip each piece of lobster into the flour mixture, making sure every piece is evenly coated for a perfect crispness.
  • Heat oil in a pan over medium heat, then shallow fry the coated lobster pieces until they’re golden brown on each side.
  • For the sauce, combine mayonnaise, chili sauce, minced garlic, lemon juice, and melted butter in another bowl.
  • Mix until the sauce is creamy and smooth.
  • After frying, toss the lobster bites in the sauce to coat them thoroughly.
  • Serve immediately while they're still warm.
