Michael Symon Strawberry Pie Recipe

Ingredients

  • 2 lbs Fresh Strawberries
  • 3/4 cup Granulated Sugar
  • 1/3 cup Water
  • 3 tbsp Cornstarch
  • 1 tbsp Lemon Juice optional
  • 1 9-inch Graham Cracker or Deep Dish Pastry Pie Crust
  • 2 cups Whipped Cream made from 1 cup of Heavy Whipping Cream

Instructions

  • Start by washing and hulling 2 pounds of fresh strawberries.
  • Divide the strawberries into two portions.
  • Crush 2 cups of strawberries in a small saucepan.
  • Add 3/4 cup granulated sugar, 1/3 cup water, and 3 tablespoons cornstarch to the crushed strawberries.
  • Mix well until combined.
  • Place the saucepan over medium heat.
  • Stir the mixture constantly until it comes to a boil and thickens.
  • This usually takes about 5-7 minutes.
  • Remove from heat.
  • Allow the mixture to cool down slightly before you pour it over the remaining whole strawberries.
  • Ensure all the strawberries are well-coated with the mixture.
  • Pour the strawberry mixture into the prepared pie crust.
  • Chill the pie in the refrigerator for at least 2-3 hours before serving to let it set.
  • Enjoy this pie with a generous dollop of whipped cream or whipped topping.
