Joanna Gaines Pimento Cheese Recipe

Sharp cheddar, roasted pimentos, and just the right amount of spice—this pimento cheese is on another level!
Grating the cheese by hand instead of using pre-shredded makes a huge difference in how creamy it turns out.
I always mix in a dash of smoked paprika because it deepens the flavor without overpowering the cheese.
A little softened cream cheese helps it hold together better and makes it spread more smoothly.

Ingredients

  • 3 cups Mild White Cheddar Cheese grated
  • 1 cup Sharp Cheddar Cheese grated
  • 4 oz. Processed Cheese such as Velveeta (grated)
  • 2 cups Mayonnaise
  • 1/2 cup Pimentos drained and diced
  • 1/4 cup Green Onion minced, light and dark parts
  • 1/4 cup Pecans toasted and chopped, optional

Instructions

  • Start by grating the mild cheddar, sharp cheddar, and processed cheese into a large bowl.
  • Add the diced pimentos to the cheese mixture, ensuring even distribution for that tangy flavor.
  • Incorporate mayonnaise into the bowl gradually.
  • Stir thoroughly until smooth and creamy.
  • Sprinkle in the minced green onions and, if using, add the toasted pecans for a crunchy texture contrast.
  • Chill the mixture in the refrigerator for at least an hour before serving.
  • This will help the flavors marry and intensify.
