Jamie Oliver’s toad in the hole is one of my favorites for its mix of crispy batter and juicy sausages!
I always make sure the sausages are browned a little before adding the batter; it keeps the flavors deep and rich.
That hot sizzle when the batter hits the pan is what creates the golden puffed-up edges.
This dish feels so hearty, especially when paired with a drizzle of gravy or a side of sautéed greens.
Don’t peek in the oven! Keeping the heat steady is what makes the batter rise high and light.

Ingredients

  • 8 Large Sausages
  • 1 cup All-Purpose Flour
  • 1 cup Milk
  • 3 large Eggs
  • 2 tbsp Sunflower Oil
  • 2 large Red Onions sliced
  • 2 cloves Garlic sliced
  • 6 tbsp Balsamic Vinegar
  • 1 tbsp Vegetable Stock Powder
  • 4 sprigs Fresh Rosemary

Instructions

  • Preheat your oven to 425°F (220°C) and place a roasting pan inside to heat.
  • Whisk together the flour, milk, and eggs in a bowl until smooth to create your batter.
  • Add the sunflower oil to the hot roasting pan in the oven and let it heat for a few minutes.
  • Carefully place the sausages into the pan and cook for about 10 minutes until they start browning.
  • Pour the batter over the sausages evenly and return the pan to the oven. Bake for about 25-30 minutes until the batter is puffed and golden brown.
