What I enjoy most about this relish is how it balances tangy tomatoes, sharp vinegar, and just the right touch of sweetness.
Start with the ripest tomatoes you can find; their natural sweetness is the backbone of this dish.
The addition of a little mustard or a hint of spice, like chili flakes, can really round out the flavors wonderfully.

Ingredients

  • 1 lb. Cherry Tomatoes red and yellow
  • 1 Jalapeño seeded and finely chopped
  • 1 Red Onion finely chopped
  • 3 tbsp. Sherry Vinegar
  • 3 tbsp. Sugar
  • 2 tbsp. Olive Oil
  • Salt to taste

Instructions

  • Prepare the Tomatoes: Chop your cherry tomatoes in half, keeping sizes consistent for even cooking.
  • Sauté the Onion: In a skillet, heat olive oil on medium heat and sauté the red onion until soft.
  • Add the Ingredients: Add cherry tomatoes, jalapeño, sherry vinegar, and sugar to the skillet.
  • Cook the Mixture: Stir the mixture occasionally, letting it simmer for about 20 minutes until it thickens.
  • Season and Serve: Add salt to taste and serve warm or cold as per your preference.
