Peel and crush 2-3 cloves of garlic in a mortar.
This infuses the flavor right from the start.
Add less than 1/2 cup of mint leaves to the mortar.
Tear them gently to release their oils.
Add less than 1/2 cup of dill and 1/2 cup of coriander.
Chop them finely to ensure a smooth texture.
Season the mixture with a nice pinch of salt.
This enhances the overall flavor of the herbs.
Mix in 1 tsp of red wine vinegar and 1 tsp of olive oil.
Stir until well combined.
Sprinkle 1 tsp of chili flakes into the mixture and continue to blend until smooth.
