Emeril Lagasse Ham Recipe

Cooking up Emeril Lagasse's ham recipe is one of my top recipes for special occasions or even just a filling Sunday dinner.
One thing that makes this recipe such a keeper is the incredible glaze made from simple ingredients like whiskey and cola, which adds a sweet and slightly smoky flavor to the ham.
Place the ham, fatty side up, in the roasting pan to ensure it cooks evenly and stays juicy.
Make sure to score a grid pattern on the ham before baking; it ensures the flavors seep into every bite.

Ingredients

  • 1 whole Ham
  • 3/4 cup Cola
  • 1/2 cup Cherry Preserves
  • 1/4 cup Orange Juice
  • 1 tsp Allspice
  • 1/4 cup Brown Sugar
  • 3 cloves Garlic
  • 2 tsp Salt
  • 1/2 tsp Black Pepper
  • 1/2 tsp Cayenne Pepper

Instructions

  • Preheat your oven to 450°F.
  • Ensure your ham is thawed if it has been frozen.
  • Score the surface of the ham in a grid-like pattern using a sharp knife.
  • This helps absorb the flavors better.
  • Rub the garlic, salt, black pepper, and cayenne over the ham.
  • Ensure that the seasoning covers the entire surface evenly.
  • Place the ham in a large roasting pan, fatty side up.
  • Pour the cola into the pan and sprinkle allspice over the ham.
  • Bake the ham uncovered for 1 hour and 15 minutes, basting every 15 minutes with the pan juices.
  • Mix the cherry preserves and orange juice in a saucepan over medium heat until melted.
  • Spoon this glaze over the ham and continue baking for another 45 minutes.
