Grapes covered in a crunchy, candy shell are as fun to eat as they are to look at!
The key to getting that perfect crack grapes coating is keeping the sugar syrup hot enough to harden instantly.
Something you can do is add a drop of flavored extract in the syrup to give an extra layer of taste without changing the texture.
Sticking toothpicks into the grapes before dipping keeps your fingers clean and makes everything easier.
I always lay them on a nonstick baking sheet instead of wax paper to help prevent sticking as they cool.

Ingredients

  • 2 cups Seedless Grapes
  • 1 cup Granulated Sugar
  • 1/2 cup Light Corn Syrup
  • 1/4 cup Water
  • 1/4 tsp Flavoring Extract your choice
  • 1/2 cup Pop Rocks Candy

Instructions

  • Wash and dry the grapes thoroughly with a clean dish towel to ensure the candy coating sticks well.
  • Insert toothpicks or skewers into the stem end of each grape, creating a handle for dipping them in candy.
  • In a medium saucepan, combine granulated sugar, light corn syrup, water, and your chosen flavoring.
  • Bring the mixture to a boil over medium heat.
  • Allow the mixture to cook, without stirring, until it reaches 300°F (hard-crack stage) on a candy thermometer.
  • This is crucial for that signature crack crunch!
  • Quickly dip each grape into the hot syrup, then roll it in pop rocks candy while still sticky, coating thoroughly.
  • Place on parchment paper to set.
