Alton Brown Peanut Brittle Recipe

There's nothing quite like the sweet and spicy kick of Alton Brown's peanut brittle!
This recipe is a tasty mix of roasted peanuts, cinnamon, and cayenne, creating that perfect balance of flavors that I just love.
One thing you don't want to skip is brushing your pan with vegetable oil to prevent sticking, which makes cleanup a breeze.
Make sure you allow it to cool fully for that signature crunchy texture!

Ingredients

  • 1 cup Sugar
  • 1/2 cup Water
  • 1 cup Peanuts
  • 1/8 tsp Cinnamon
  • 1 pinch Cayenne
  • 1/4 tsp Salt
  • 1 tsp Vegetable Oil

Instructions

  • Combine the peanuts, cinnamon, cayenne, and salt in a small bowl.
  • Set the mixture aside.
  • Brush the inside of a medium-sized heavy saucepan with vegetable oil.
  • This will prevent sticking.
  • Add sugar and water to the saucepan.
  • Cook over high heat, stirring occasionally.
  • Bring the mixture to a boil.
  • Cover and let it cook for 3 minutes without stirring.
  • This helps the sugar dissolve properly.
  • Remove the lid and continue cooking until the sugar turns to a deep amber color.
  • Stir in the peanut mixture until evenly coated.
