Rub this spice blend evenly over the pork loin.
Heat olive oil in a skillet over medium-high heat.
Brown the pork loin on all sides for about 5 minutes.
Transfer the browned pork to the slow cooker.
Combine chicken broth, lemon juice, and soy sauce in a separate bowl.
Pour this mixture over the pork.
Cover and cook on low for 8-10 hours or on high for 4-5 hours, until tender.
Once it's done, transfer to a platter and let it rest before slicing.
