  • 2 tbsp Lemon Juice
  • 2 tbsp Soy Sauce
  • Salt to taste

Instructions

  • Trim any visible fat from the pork loin to keep it lean.
  • If needed, cut the pork to fit your slow cooker.
  • In a small bowl, mix garlic powder, ginger, thyme, and black pepper.
  • Rub this spice blend evenly over the pork loin.
  • Heat olive oil in a skillet over medium-high heat.
  • Brown the pork loin on all sides for about 5 minutes.
  • Transfer the browned pork to the slow cooker.
  • Combine chicken broth, lemon juice, and soy sauce in a separate bowl.
  • Pour this mixture over the pork.
  • Cover and cook on low for 8-10 hours or on high for 4-5 hours, until tender.
  • Once it's done, transfer to a platter and let it rest before slicing.
