Ingredients

  • 1 lb Ground Beef
  • 1 Onion chopped
  • 2 cloves Garlic minced
  • 1 can Black Beans 15 oz.
  • 1 jar Salsa 16 oz.
  • 2 cups Mexican Cheese Blend shredded
  • 12 Corn Tortillas
  • 1 cup Sour Cream
  • 2 tsp Chili Powder
  • 1 tsp Paprika
  • 1/2 tsp Cumin
  • 2 tbsp Olive Oil

Instructions

  • Preheat your oven to 425°F and grease a 9x13-inch baking dish.
  • Cook the ground beef in a skillet over medium heat until browned.
  • Add chopped onion and minced garlic, cooking until softened.
  • Mix in the black beans, salsa, chili powder, paprika, and cumin.
  • Let the mixture simmer for 10 minutes to combine flavors.
  • Layer the baking dish with four corn tortillas.
  • Spoon half of the beef mixture over the tortillas.
  • Sprinkle a layer of cheese.
  • Repeat the layers, finishing with tortillas and cheese.
  • Bake the dish for 20-25 minutes, or until bubbly and the cheese is melted.
  • Top with dollops of sour cream and garnish with fresh cilantro if desired.
  • Allow it to cool for a few minutes before slicing and serving.
