Ingredients

  • 4 Chicken Breasts
  • 2 tbsp Olive Oil
  • 1 tsp Chili Powder
  • 1 tsp Cumin
  • 1 tsp Salt
  • 1 tsp Pepper
  • 6 Jalapeño Peppers
  • 2 cups Cheddar Cheese shredded
  • 8 oz Cream Cheese softened
  • 1/2 cup Sour Cream
  • 1 cup Bacon cooked and crumbled
  • 1/4 cup Green Onions chopped

Instructions

  • Preheat your oven to 375 degrees F.
  • Place the chicken breasts on one half of a baking sheet.
  • Drizzle with 2 tablespoons of olive oil and season with chili powder, cumin, salt, and pepper.
  • On the other half of the baking sheet, place the jalapeño peppers.
  • Drizzle olive oil over the peppers.
  • Bake everything for about 25 minutes.
  • Combine the cooked chicken, 3/4 of the bacon pieces, 1 1/2 cups of cheese, cream cheese, sour cream, and half of the green onions in a large mixing bowl.
  • Stir well.
  • Spread this mixture evenly in a casserole dish.
  • Top with the remaining cheese, green onions, and bacon.
  • Bake the casserole in the preheated oven for 20 minutes, or until bubbly and golden on top.
  • Let it cool for 5 minutes before serving.
