Joanna Gaines Chicken Casserole Recipe

I love me some warm, creamy casserole straight from the oven. And Joanna's is packed with rich, cheesy goodness and tender chicken!
I always start with well-seasoned chicken. Even though it’s mixed into the casserole, having well-seasoned pieces makes every spoonful better.
A little garlic and onion in the base bring out deeper flavors without overpowering the dish. It’s the easiest way to make it even better.
If  you want a little extra texture, top it with crushed crackers or breadcrumbs for a crispy contrast to the creamy filling.

Ingredients

  • 1 ½ lbs Chicken Breast cooked and shredded
  • 2 cans Cream of Chicken Soup 10.5 oz each
  • 1 can Diced Tomatoes with Green Chilies 10 oz
  • 1 cup Sour Cream
  • 2 cups Cheddar Cheese shredded
  • 1 packet Taco Seasoning
  • 12 Corn Tortillas
  • Salt and Pepper to taste

Instructions

  • Preheat your oven to 375°F.
  • Feel free to chat while it heats up!
  • In a mixing bowl, combine cream of chicken soup, diced tomatoes, taco seasoning, and sour cream.
  • Mix well to create a smooth sauce.
  • Layer the bottom of a 9x13-inch baking dish with half of the tortillas.
  • Add half of the cooked chicken, sauce, and shredded cheese.
  • Repeat the layers.
  • Cover the casserole with aluminum foil and bake for 20 minutes.
  • Remove the foil and bake for an additional 10 minutes to melt the cheese.
  • Let the casserole cool for a bit before serving.
  • This makes it easier to cut and serve.
