  • 3 Bananas ripe
  • 1 Egg
  • 1/3 cup Almond Butter
  • 1/4 cup Coconut Oil
  • 1/4 cup Coconut Sugar
  • 1/3 cup Almond Milk
  • 1 cup Almond Flour
  • 1 cup Rice Flour
  • 1/2 tsp Salt
  • 1 tsp Vanilla Extract
  • 1 tsp Baking Soda
  • 1 tsp Cinnamon
  • 1/2 cup Walnuts chopped
  • 1/2 cup Chocolate Chips

Instructions

  • Preheat your oven to 350°F.
  • Lightly grease a 9-by-5-inch loaf pan with coconut oil and line it with parchment paper.
  • Mash the bananas in a large mixing bowl using a fork until smooth.
  • Add the egg, almond butter, melted coconut oil, and coconut sugar.
  • Whisk them together thoroughly.
  • Pour in the almond milk and vanilla extract.
  • Continue mixing until all ingredients are combined evenly.
  • In another bowl, mix almond flour, rice flour, salt, baking soda, and cinnamon.
  • Fold this into the banana mixture until just combined.
  • Stir in the walnuts and chocolate chips.
  • Transfer the batter to the prepared loaf pan.
  • Bake for about 50 minutes, or until a toothpick inserted into the center comes out clean.
  • Cool in the pan for 10 minutes before transferring to a wire rack.
