Cracker Barrel Sweet Baby Carrots Recipe

Cracker Barrel’s baby carrots are a must-order side, but they’re even better when made fresh at home (just sayin'!).
I like to cook them just until they’re fork-tender so they keep their shape without turning too soft.
Butter and brown sugar give them just enough sweetness, but a little salt keeps everything from tasting one-dimensional.
For a deeper caramelized taste, I sometimes let them simmer a little longer until the glaze thickens slightly.
A little drizzle of honey instead of sugar works great too, especially if you want a more natural sweetness.
If you end up with extra, they reheat beautifully and even taste great mixed into a bowl of mashed potatoes!

Ingredients

  • 1 lb Baby Carrots
  • 1/8 cup Brown Sugar
  • 1 tbsp Butter
  • 1 tsp Salt
  • 1 tsp Bacon Drippings
  • Water enough to cover carrots

Instructions

  • Place your baby carrots in a medium-sized pot and cover them with water.
  • Add salt to the water to enhance flavor.
  • Bring the water to a boil over medium heat.
  • Cook the carrots until they just begin to soften, about 7 to 8 minutes.
  • Drain the water from the carrots, leaving them in the pot.
  • Add butter, brown sugar, and bacon drippings.
  • Lower the heat and stir the ingredients together gently.
  • Let them cook for an additional 3 to 5 minutes to allow the carrots to glaze well.
  • Once the carrots are tender and well-coated with the glaze, they are ready to serve!
