Ingredients

  • 1 tbsp Olive Oil
  • 1 Zucchini chopped
  • 1 Red Bell Pepper chopped
  • 1 Yellow Bell Pepper chopped
  • 1 tbsp Garlic Paste
  • 1/4 tsp Red Pepper Flakes
  • Salt to taste
  • Pepper to taste
  • 2 Eggs
  • 2 tbsp Fresh Herbs chopped
  • 1 lb Ground Turkey
  • 1 cup Panko Bread Crumbs
  • 1/2 cup Grated Cheese
  • 1/2 cup Ketchup
  • 2 tbsp Balsamic Vinegar

Instructions

  • Preheat your oven to 425 degrees F (220 degrees C).
  • In a large saute pan, heat the olive oil over high heat.
  • Add the chopped zucchini, red and yellow bell peppers, garlic paste, red pepper flakes, salt, and pepper.
  • Cook for about 5 minutes until the vegetables are almost soft.
  • Set the cooked vegetables aside to cool.
  • In a large bowl, whisk together the eggs and fresh herbs.
  • Add the ground turkey, panko bread crumbs, grated cheese, ketchup, balsamic vinegar, and the cooled vegetables.
  • Mix until the ingredients are just combined.
  • Mold the meatloaf mixture on a baking sheet lined with parchment paper into a loaf shape.
  • Bake in the preheated oven for about 1 hour or until the internal temperature reaches 165 degrees F.
