Preheat your oven to 425 degrees F (220 degrees C).
In a large saute pan, heat the olive oil over high heat.
Add the chopped zucchini, red and yellow bell peppers, garlic paste, red pepper flakes, salt, and pepper.
Cook for about 5 minutes until the vegetables are almost soft.
Set the cooked vegetables aside to cool.
In a large bowl, whisk together the eggs and fresh herbs.
Add the ground turkey, panko bread crumbs, grated cheese, ketchup, balsamic vinegar, and the cooled vegetables.
Mix until the ingredients are just combined.
Mold the meatloaf mixture on a baking sheet lined with parchment paper into a loaf shape.
Bake in the preheated oven for about 1 hour or until the internal temperature reaches 165 degrees F.
