Preheat your oven to 375°F.
Set a rack in the middle.
Core and hollow out the bell peppers.
Place them aside.
Heat olive oil in a skillet over medium heat.
Add chopped onion and minced garlic.
Cook until softened.
Stir in ground beef.
Brown it and add cooked rice, salt, and pepper.
Mix the ingredients thoroughly.
Stuff the bell peppers with the beef and rice mixture.
Arrange them in a baking dish.
Pour canned tomatoes over them and sprinkle with cheese.
Cover the dish with foil.
Bake for 30 minutes or until the peppers are tender.
Remove the foil in the last 5 minutes for a bubbly cheese topping!
