Alton Brown Stuffed Peppers Recipe

Ingredients

  • 4 Bell Peppers
  • 1 lb Ground Beef
  • 1 cup Cooked Rice
  • 1 can Tomatoes 14 oz.
  • 1 Onion chopped
  • 2 cloves Garlic minced
  • 1 cup Cheese shredded
  • Salt
  • Black Pepper
  • 1 tbsp Olive Oil

Instructions

  • Preheat your oven to 375°F.
  • Set a rack in the middle.
  • Core and hollow out the bell peppers.
  • Place them aside.
  • Heat olive oil in a skillet over medium heat.
  • Add chopped onion and minced garlic.
  • Cook until softened.
  • Stir in ground beef.
  • Brown it and add cooked rice, salt, and pepper.
  • Mix the ingredients thoroughly.
  • Stuff the bell peppers with the beef and rice mixture.
  • Arrange them in a baking dish.
  • Pour canned tomatoes over them and sprinkle with cheese.
  • Cover the dish with foil.
  • Bake for 30 minutes or until the peppers are tender.
  • Remove the foil in the last 5 minutes for a bubbly cheese topping!
