  • 2 1/2 cups Flour
  • 3/4 cup Confectioners' Sugar
  • 1 cup Butter melted
  • 4 Eggs
  • 2 cups Granulated Sugar
  • 1/3 cup Lemon Juice
  • 1 1/2 tsp Lemon Zest optional
  • 1/4 cup Flour
  • 1/2 tsp Salt

Instructions

  • Preheat your oven to 350°F.
  • Line a 9x13-inch baking dish with parchment paper or foil.
  • Leave an overhang on all sides.
  • In a bowl, mix the flour, confectioners' sugar, and melted butter until combined.
  • Press the mixture evenly into the prepared baking dish to form the crust.
  • Bake for about 20 minutes, or until lightly golden.
  • While the crust is baking, whisk the eggs, granulated sugar, lemon juice, lemon zest, flour, and salt in another bowl.
  • Ensure the mixture is smooth and well combined.
  • Pour the lemon mixture over the warm crust.
  • Spread it evenly with a spatula to cover the entire surface.
  • Return the dish to the oven and bake for an additional 20-25 minutes.
  • The top should be set, but make sure it does not brown too much.
  • Let it cool completely before slicing into bars.
