Alton Brown Carrot Cake Recipe

Ingredients

  • 2 1/2 cups Carrots grated
  • 1 cup Granulated Sugar
  • 1 cup Brown Sugar packed
  • 4 Eggs
  • 1 1/2 cups Oil vegetable or canola
  • 2 cups All-Purpose Flour
  • 2 tsp Baking Powder
  • 1 tsp Baking Soda
  • 1 1/2 tsp Ground Cinnamon
  • 1/2 tsp Ground Ginger
  • 1/4 tsp Ground Cloves
  • 1 tsp Salt
  • 1/2 cup Pecans toasted and chopped

Instructions

  • Preheat your oven to 350°F.
  • Lightly grease a 9-by-3-inch round cake pan and dust it with flour.
  • Line the bottom with parchment paper.
  • Put your grated carrots in a large mixing bowl.
  • Set aside.
  • In another bowl, combine the flour, baking powder, baking soda, spices, and salt.
  • In a separate bowl, whisk together the granulated sugar, brown sugar, and eggs until fully combined.
  • Gradually add in the oil while continuing to whisk.
  • Add the flour mixture to the wet ingredients and mix until just combined.
  • Fold in the grated carrots and chopped pecans.
  • Pour the batter into the prepared cake pan.
  • Bake the cake for 45-50 minutes or until a toothpick inserted into the center comes out clean.
  • Let the cake cool in the pan for 10 minutes, then remove from the pan and allow it to cool completely on a wire rack.
